Sourcing the Finest Beans

It all begins with our carefully harvested Arriba Nacional beans from our family’s farms in Montalvo, Ecuador. These beans, known for their exceptional flavor and aroma, are hand-picked and dried under the perfect conditions to preserve their natural richness.

Peeling for Purity

Once the beans are dried, they are passed through a specialized peeling machine that removes the outer shell. This step ensures that only the purest cacao nibs, which are the core of the bean, are used in our chocolate-making process.

Toasting to Perfection

Next, the beans are gently toasted to bring out their deep, complex flavors. Toasting is a crucial step in developing the unique taste of our chocolate, unlocking the floral and fruity notes that make Arriba Nacional so special.

Mixing for a Smooth Finish

Finally, the toasted cacao nibs are ground and mixed in small batches using traditional machines. We use two specialized mixing machines to refine the chocolate until it reaches the perfect smoothness and consistency. This careful process ensures that the flavor and texture are just right, giving you a rich, luxurious chocolate bar that melts in your mouth.
